A Quiet Inheritance Where Tradition and Modernity Intersect. A long-standing sushi restaurant in the heart of Ginza 7-chome has relocated to the third floor of the newly opened commercial complex, Granbell Square, within the same district.
The new space inherits the refined atmosphere and intimacy cultivated over the years, while offering a more polished and elevated dining experience. The façade draws inspiration from the textured plasterwork of traditional Japanese storehouses (kura), exuding a calm dignity that gently welcomes guests. Beyond the noren curtain, a quiet antechamber awaits. On its wall hangs a carefully chosen scroll, cherished by the chef, quietly heightening the sense of anticipation for the experience to come. The main dining area is centered around an L-shaped counter with ten seats. The countertop, serving boards, and cutting boards are all crafted from solid hinoki cypress. A floor post made from fragrant kōbushi wood and lacquer-like wooden side finishes create a space that balances natural texture with understated elegance. In front of the counter, a kamidana (Shinto altar) is placed, while the rear of the seating area offers storage for guests’ coats, bags, and carry-on luggage—details that ensure both comfort and peace of mind. The space subtly incorporates the spirit of a traditional shoin-zukuri tea room, echoing the essence of sushi culture itself. In this minimal and serene setting, the chef’s craft and presence are brought into quiet focus. Offered is a singular course of 15 carefully selected and aged pieces of nigiri. By eliminating excess and allowing ingredients, gestures, and space to harmonize as one, the restaurant aspires to be a place where a story is delicately told—one piece at a time.
